We love to snack in the evenings but commercial snacks in the grocery stores are either unhealthy for you or they are too expensive for us.

When a neighbor brought us a nice bunch of large carrots I immediately got the idea of making carrot chips.

I removed the tops and gave these to the chickens.

I then washed the carrots outside to avoid putting any dirt into our drain in the house. But I left the skin on the carrots.

Next I sliced the carrots up into thin slices. I used the largest carrots for the chips.

I laid these out on a single layer of a drying rack. I have 9 drying racks from an old dead food dehydrator.

I put the entire lot of them into the oven. We have a gas oven so the pilot light is always on. We use this all year to dehydrate herbs and vegetables. It is free waste energy and does the job well.

You can also use your normal food dehydrator. Simply check the owners manual for directions and settings.

After a few days we had nice carrot chips. I put them into a pot so I can use the drying racks on the next project. The carrot chips can not be put into vacuum sealer bags for later use this winter as snacks or in cooking.
